My Mom’s Killer Guac Recipe

I was going through the pictures on my phone (because I have too many) and I found my mom’s recipe for guac. It is amazing! Now I don’t like Guac but I like this one. It is very good with lime tortilla chips!

Mom’s Guacamole Recipe:

Add these ingredients and then mash together:

  • 1 avocado
  • lime juice (drain)
  • 1/2 t salt
  • 1/2 t cumin
  • 1/4 t Cayenne

Then add

  • 1/2 onion
  • 2 Roma tomatoes
  • 1 T cilantro
  • 1/2 a jalapeño
  • 1 large clove of garlic
  • more lime juice (to taste)

Make sure as you are mixing it not to mash it up too much. It is best a little chunky. ENJOY!

Cinnamon Roll Casserole

My husband and I told our Sunday School that we’d be bringing breakfast this morning. We work with the College and Career Class at our church. I was super excited as I have had many Pinterest recipes I have been dying to try. The only problem was I couldn’t decide. I finally decided on the Cinnamon Roll Casserole. It was very easy to make and I received a lot of compliments on it! It tasted like a french toast with lots of cinnamon in it. Everyone in the class had some and we had only a little left. This recipe is definitely a winner! Thank you to  this blogger for their wonderful recipe!

Cookie Dough Balls

This is another fantastic recipe that I found on Pinterest. Once again, it hit my weakness with the cookie dough. I love cookie dough! An added bonus to this recipe is that it only has 5 ingredients! My kind of recipe! This one, like the last, does not have eggs in it so it is ok to eat it raw. On top of the cookie dough balls I added chocolate in the shape of a chocolate chip. A very good recipe!

No Bake Joe-Joe Bars

Pinterest is a very fascinating website. I have “pinned” many different recipes and projects, but this was the first one I tried. It had a very happy ending. 🙂 I changed the recipe a little to fit my tastes.

What you need:

  • one package of Joe-Joes (the original recipe was for Oreos, but Joe-Joes taste much much better!)
  • 4 tablespoons of butter
  • 5 cups of Large marshmellows (I just used a bag of large marshmallows)

I used my Pampered Chef Chopper because my food processor is still packed up from the move. 🙂

First, you butter a 8×8 baking dish then cover it with parchment paper. Then butter the paper to avoid the bars from sticking.

Second, you chop up the Joe-Joes (Oreos) until they are very fine.

Next, put the marshmallows and butter in a microwavable bowl and heat for 2 minutes in the microwave or until the marshmallows are large and puffy.

Then, mix the Joe-Joe crumbs into the marshmallow mixture and mix well.

Next you will pour the mixture into your baking dish.

Then you cover the mixture with parchment paper and flatten to make even bars.

Finally, let it sit for 10 minutes until it hardens some and then enjoy. (Note: My husband and I enjoyed them best when they had sat overnight!)

These are easy to make and taste like Rice Crispy Treats but much better! Enjoy!
